I picked up a package last week that has made my last few days very tasty. Vermont Creamery sent me some of their goat cheese! Mild in flavor, nutrient dense and high in calcium and protein, goat cheese in one food that is on my list of favorites. Vermont Creamery has a range of different cheese that you can crumble or spread (hello roasted red pepper) and dip. I was going to take pictures of the dip, until I realized that each container was empty. Oops!
It was fun to learn that the Vermont Creamery lives just down the road from one of our favorite fashion brands for kids – Zutano! My son has been wearing Zutano since the day he was born and we’ve been big fans of their bright and colorful and high quality apparel for years. Zutano has always strived to support a nurturing world for babies to thrive in, so it was no surprise when they decided to team up with their neighbors on a fun (and delicious) initiative.
We are still in the thick of strawberry season and over the past couple of weeks we’ve taken the kids strawberry picking several times. Freezer jam is their all-time favorite and so we like to make as much as we can for the winter months. In an attempt to make a treat for the kids, I decided to make a Strawberries ‘N Cream Cupcake topped with goat cheese frosting. Don’t wrinkle your nose, it was divine! The goat cheese added a slight tang and overall lots of creaminess to the frosting. After dinner, my son and I sat in the lawn and dined on cupcakes (recipe below).

Strawberries ‘N Cream Cupcakes With Goat Cheese Frosting
1 batch of your favorite Vanilla Cupcakes
¾ c Strawberry Jam
Goat Cheese Frosting Ingredients:
12 oz Vermont Creamery’s Classic Creamy Coat Cheese
6oz Butter, softened
4 c Powdered Sugar
1 tsp Vanilla Extract
¼ to ½ c Milk
Strawberry jam or fresh strawberries
• Mix cake batter together as recipe dictates
• Gently stir in raspberry jam and fold in fresh raspberries. Bake as directed.
• While cupcakes are cooling, prepare frosting.
• Cream butter and creamy goat cheese.
• Add powdered sugar , beat with mixer.
• Add milk and vanilla slowly in 2-3 parts, beating till frosting is at desired consistency. If frosting is a little too wet, add a little more powdered sugar.
• Spread or pipe onto cupcakes and top with 1-2 tsp of fresh strawberries or strawberry jam.
