April is busy month for many families, as it is jam packed with holidays. From Passover to Easter Monday, you can be certain that at some point, entertaining will be in your near future.
Living far away from extended family, we have quite a bit of overnight company on the weekends, particularly Easter weekend, when we usually opt to stay close to home instead of making the 5 hour trek south. I love having people up, and one of my favorite things to do is cook yummy meals and have a big breakfast a little later on in the morning once everyone is up and moving.
This past weekend I found myself having a couple of extra men in the house, two of my husbands three brothers. I wanted to make something easy – something that wouldn’t leave me hovering over the stove all morning. Anyone that makes big breakfasts knows that timing is everything. So I found some day old bread, and opted to create a “Baked French Toast” dish.
The result was delicious, and was a hit with both the kids and the grown-ups. This is one of those recipes I will be keeping in my back pocket for future visitors. Perhaps I would just change up the flavors based on the seasons.
12 cups day old bread, cubed (multigrain/mix)
3 cups non-dairy milk (I used almond milk)
2 tsp. cinnamon
2 tsp. vanilla
1/4 cup brown sugar or maple syrup
3 small apples diced
– Cube bread and put into large bowl
– Peel & dice 3 apples
– In a separate bowl mix eggs, milk, vanilla, cinnamon and diced apples
– Pour wet mixture over bread and combine until bread is completed coated
– Pour into greased deep baking dish
– Bake at 350F for 45-55 minutes covered, 15 minutes uncovered
Serve with syrup, or applesauce
