Ever since I was engaged to be married in St. Martin, this island of two nations has held a special place in my heart. Ratatouille is one of my favourite meals. I usually make it in my slow cooker, allowing the flavours to mix and meld for hours. While searching through my fridge at 5 p.m. the other day, I decided that I would make this delicious dish on the stove as I was short on time.
