Food Friday Featuring Eggs Baked in Avocados!


Ever since my girls were babies they have LOVED to eat avocado.  It is such a creamy, buttery, rich and healthy food that can be added to almost anything and it’s a super snack on its own.  One of the cleverest ways I have discovered is to bake an egg inside the half of an avocado and then dress it in different ways. Sort of like an updated “frog in a hole”. There are many different examples of this idea and Pinterest is a great source for a step by step photo guide.  I usually prepare this meal for my girls as a special weekend breakfast, making it as simple as possible with a little salt and pepper and some melted cheese on top.


  • 2 avocados
  • 8 eggs
  • 2 limes
  • Salt and pepper to taste


  1. Preheat oven to 450.
  2. Cut each avocado in half and remove the pit. Using a spoon, scrape out the center of each halved avocado so that it is large enough to accommodate an egg (about 1 1/2 tablespoons). Squeeze lime juice over the avocados and season with salt, then place on baking sheet. Break an egg into the center of each avocado.
  3. Bake in the oven until whites are set and yolk is runny, about 10 to 12 minutes.
