Food Friday Featuring: Sweet & Fruity Mango Muffins

When it comes to baking I tend to keep it pretty basic. Taking a recipe that serves as a foundation that I can experiment and build on makes me feel more confident in the kitchen and more likely to try new things.

Today’s recipe is as simple as it gets when making muffins.  It calls for the basic ingredients that I usually always have on hand, and then I can easily add different ingredients to make new varieties. Because muffins are basically mini cakes, they don’t usually live up to their “healthy” reputation.  I like to substitute applesauce when a recipe calls for vegetable oil to make my muffins a bit healthier and the applesauce also keeps them extremely moist.


  • 2 cups of all-purpose flour
  • 3 tsp baking powder
  • ½ tsp salt
  • ¾ cup white sugar
  • 1 egg
  • 1 cup milk
  • ¼ cup vegetable oil (1/4 cup of unsweetened applesauce)
  • 1 cup of chopped fresh mango


  • Pre heat oven to 400 degrees
  • Sift flour, baking powder, salt, and sugar together in a bowl
  • In a small separate bowl whisk egg with a fork and add milk and applesauce
  • Make a well in the middle of the dry ingredients and pour the wet ingredients into it
  • Combine both until batter is together but still clumpy
  • Add mango and stir until just combined
  • Spoon into paper muffin cups and bake for 25 minutes or until golden brown
