Food Friday Featuring: Sweet & Crispy Homemade Granola

Crispy, sweet, hearty, and fresh homemade granola is not only a super healthy way to start your day but also extremely fast and easy to make.  I was able to make a beautiful blend with simple ingredients that I had on hand in my kitchen such as coconut, almonds, oats, honey and apricots.  I am already dreaming of making a sweeter and more desert appropriate blend incorporating brown sugar, maple syrup and dried apple! YUM!

This granola was adapted from Ina Garten’s recipe on foodnetwork.com.  My granola crisped up beautifully in only 20 minutes and by cutting the recipe in half I was able to make plenty for our family of 4.


2 cups old-fashioned rolled oats
1 cups sweetened shredded coconut
1 cups sliced almonds
1/4 cup vegetable oil
1/2 cup good honey
1 1/2 cups small diced dried apricots
1 cup dried cranberries

Preheat the oven to 350 degrees F.
Combine the oats, coconut, and almonds together in a large bowl. Stir together the oil and honey in a small bowl. Pour the liquids over the oat mixture and stir until all the oats and nuts are coated. Pour onto a 13 by 18 by 1-inch sheet pan lined with parchment paper. Bake, stirring occasionally, until the mixture turns a nice, golden brown, about 20 minutes.

Remove the granola from the oven and allow to cool, stirring occasionally. Add the apricots and cranberries. Serve on its own or over yogurt for yummy breakfast.
Store cooled granola in an airtight container.
